classes/gtk-doc: lazy assign GTKDOC_ENABLED
By letting a recipe assign GTKDOC_ENABLED trivially there is a simple and clear way to disable gtk-doc for specific build configurations. Signed-off-by: Ross Burton <ross.burton@intel.com>
